Easter Brunch at the Coyote

Waterville Valley Resort will host a weekend chock-full of Easter programs and events, including a special Easter Brunch by Chef Sean at the Coyote Grill (located on the top floor of the White Mountain Athletic Club).

Here is a sampling of what you might find at the Coyote Grill this Sunday, April 4 from 10 a.m. to 2 p.m. (yummmmm…just typing this made my mouth water!):

Caesar Salad

Soup of the Day

Seared Scallops
U~10 scallops, roasted red pepper vinaigrette, organic rainbow micro greens, white truffle oil

Crab Cakes
Maine crab cakes with remoulade and organic rainbow micro greens

Eggs Benedict
Eggs and Canadian bacon over toasted English muffin topped with hollandaise sauce, served with home fries

Western, veggie, or lobster omelet served with home fries and toasted English muffin

Eggs & Hash
Two poached eggs, homemade corned beef hash, home fries and toasted English muffin

Stuffed French Toast
Strawberry and cream cheese stuffed French toast, with caramelized walnuts, strawberry puree, and maple syrup

Vermont Ham Steak
Served with mashed sweet potato and raisin brown sugar sauce

Baked Haddock
Panko crumbed fresh Atlantic haddock with basmati rice and lemon butter

Rack of Lamb
Rosemary olive oil marinated grilled rack of lamb with mashed potatoes and port wine demi glace

Chicken and Risotto
“Parisienne Style” chicken breast, cranberry risotto, aged Vermont cheddar, julienne golden crisp apple, hazelnut butter
